At MILLSTONE BREAD we join many Artisan bread bakers world-wide who enjoy making bread the old fashioned way and are interested in making simply good bread.  We are among those who are committed to making breads using organic, locally grown grains as an alternative to the mass produced, nutrient deficient factory made breads of today.  Our hand-formed loaves are made in small batches and baked in old-world tradition using our wood fired bake oven. 

     Each day's baking begins the day before when we fire our hearth to over 800 degrees using one wheel barrow of hard wood.  When we arrive to prepare our doughs at 4am the following day the oven is just right for baking your bread.  We rake out the coals, sweep out the askes and mop the hearth before loading our first batch into the oven.  The 8 tonnes of concrete and insulation that surround the baking chamber will have absorbed enough heat to continue baking throughout the day as energy efficiently as possible.  Our final baking for the day is determined by the oven when the heat from within has been exhausted.  Our method of baking bread this way is not as exacting as electric or gas fired ovens making our quantities and varieties hard to plan or predict in advance.  Our hope is that you find our breads worth enduring the above.  We are grateful for your patience and your endorsement of what we are trying to achieve.  We are truly honoured that you have chosen our breads to eat and serve to those who matter most to you.
